Enjoy perfect and delicious meal cold- fashioned patato salad with various weird flavor spices.. !! It’s really good to serve with chili. So try out this dish at home with leftover potatoes.. Its Simple and good.. !
2 1/2 pounds red potatoes, large diced
3 tablespoons cider vinegar
3/4 cup mayonnaise
1 teaspoon mustard powder
1/4 cup chopped parsley
1 spring of chopped fresh tarragon
1 tablespoon chopped fresh tarragon
1/2 tablespoon very thinly sliced garlic
3 tablespoons finely chopped cornichons
1/2 cup small dice red onion
1/2 cup thinly sliced celery
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
If using white potatoes, peel potatoes and boil in large pot until they are fork tender. You don’t want to over cook these. Drain in a colander and place in an ice bath to cool for 2 to 3 minutes.
Slice potatoes into rounds using a chef’s knife. Place the potatoes in a zip-top bag, add the vinegar and toss to coat. Place bag in the refrigerator overnight. This allows the vinegar to soak into the potatoes and improves the flavor.
Combine the mayonnaise and ground mustard. Then add the parsley and tarragon and combine thoroughly. Add the garlic, red onion, and celery. Finally, add the potatoes and mix until completely coated. Add cracked pepper and kosher salt to taste. Let potato salad chill in the refrigerator for at least 1 hour before serving.
